Crispy Puris
(crispy puffed puris made of wheat and/or semolina)

Sev
(gram flour noodles)

Boiled potatoe

Date-tamarind chutney

Mint-coriander chutney

Whisked yogurt
(try vegan yogurt for vegan version of this recipe)

Instructions
Assemble puris on a plate. Gently break the crisp top of it using a thumb.
Add boiled potatoes, date-tamarind-chutney, green chutney, garlic chutney, whisked yogurt, and sev to all the puris. Optionally, add chopped onions.
Sprinkle red chili powder, chaat masala, and chopped coriander leaves. You can top it off with more yogurt or any chutney you like. Enjoy!

Assemble the puris with all the stuffing and chutneys right before serving. If done earlier, the puris will lose it's crispness and become soggy.
