This incredibly easy, quick, and amazingly delicious dessert soup requires no cooking. The berries are in season and it is a perfect time and season to make this soup. You can make this soup with raspberries, strawberries or blueberries. The addition of a very small quantity of mint with the raspberry takes it 3 notches up!! You will be surprised what certain ingredient pairings can do to a recipe. The combination of the ingredients used in this soup makes it smooth, silky, and oh-so-yummy!!!
Using a blender, puree the raspberries. Use the raspberry/cranberry juice while blending.Some raspberries have a lot of little seeds. So try out a spoonful of the above mixture and if needed, strain it with tea-strainer or something similar. I have tried it both ways and whenever there are a lot of seeds, straining it is a good idea.
Pour it in a serving bow. Fold in the sour cream and heavy cream.
Add sugar, lemon juice. Mix well. Refrigerate.
Serve chilled. Garnish with few drops of heavy cream, very finely chopped mint leaves.
