Beetroot Hummus
Soak garbanzo beans overnight or at least for 4 hours. Once soaked, wash it, add salt and 3-4 cups water, boil it until soft. Drain. If using canned garbanzo beans, there is no need to boil. Just drain it out of the can and wash it if you prefer.
Blanch or boil the beetroot. For blanching, first wash the beetroot really well. Cut into 2-4 pieces. Take about 2-3 cups water in a vessel and bring it to a boil. Add the beetroot and let it boil for 3-5 minutes. Remove from water. For boiling, do the same process as above but boil it until completely cooked. Peel the blanched/boiled beetroot and chop it further in small pieces.
Add the cooked garbanzo beans, chopped beetroot. tahini, chopped garlic, a pinch of salt, and some water (no more than ¼ cup). Give it a good whiz in a food processor for about 4-5 minutes. While it is being processed, add lemon juice and a tablespoon of olive oil. Continue to run the food processor until the hummus is nice and smooth unless you like a bit grainy texture, in which case you can shorten this process by a couple of minutes. Remove it in a bowl.
Add the finely chopped parsley. Mix well. Add a tablespoon of olive oil on top. The beetroot hummus is ready.
Beetroot Hummus Toast:
Take 2 slices of bread. Lightly toast these.
Chop 2-3 red radishes in thin roundels.
Spread 1-2 tablespoons of hummus on each of the toasted bread, top it with radishes, chopped parsley, sprinkle it with some salt and freshly ground black pepper.Enjoy!
