This delicious chilled raspberry soup is born to be the star of your party! This incredibly easy, quick, and amazingly delicious dessert soup requires no cooking. The berries are in season and it is a perfect time and season to make this soup. You can make this soup with raspberries, strawberries, blueberries etc. The addition of a very small quantity of mint with the raspberry takes it 3 notches up!! You will be surprised what certain ingredient pairings can do to a recipe. The combination of the ingredients used in this soup makes it smooth, silky, and oh-so-yummy!!!
This is one fruit soup that I love and can have it 3 times a day whenever I make it 🙂 The chilled raspberry soup can be a dessert soup or an appetizer soup. This soup fits perfectly with the motto ‘Eat dessert first’.
This is one of my early recipes that I have recreated. I posted the initial one when I had started blogging back in 2009. This one still remains one of my favorite Dessert recipes even after almost 10 years of blogging. I have updated the pictures on this recipe with current ones.
The recipe is quite simple, takes less than 15 minutes to make it. Here is a little backstory which I m re-posting:
I had this soup when I went on a cruise, a few years ago. Instantly, I fell in love with the taste. I searched the internet and got several different recipes. I did not follow one complete recipe but combined a few and then changed the proportions based on what I liked. The result was Y-U-M-M-Y!!! Did it compare to the one I had on the cruise? Well, I don’t know as I only have the memories of how I loved it, but don’t exactly remember the taste.
This recipe can easily made vegan by using vegan sour cream and vegan heavy cream.
Certain recipes I looked at called for using sour cream and certain others called for heavy cream. Instead of using either one, I used a combination of both and absolutely loved it. You can easily try this with some other variations like milk or greek yogurt etc. in case you do not want to use heavy cream.
I was thinking of what to use for garnishing the soup and thought about using a mint leaf. While doing so I happened to try a mint leaf and the soup around the same time – and voila!!! The soup tasted so much yummier with a mint leaf. So, a suggestion for garnishing, finely chop a few mint leaves and add it to the soup and mix. Not too much, but just maybe a quarter teaspoon of mint leaves enhances the taste of the soup so much more!
Chilled Raspberry Soup
Ingredients
- 20 oz Raspberries fresh or frozen
- ½ cup Sugar use more or less depending upon the sweetness/sourness of the raspberries
- 1 cup Raspberry or Cranberry juice (I used a combination of Raspberry-Crabnerry juice)
- ¾ cup Sour cream use vegan sour cream for vegan version
- ¾ cup Heavy cream use vegan heavy cream for vegan version
- 2 teaspoons Lemon juice
- 2 tablespoons Mint, finely chopped
Instructions
- Using a blender, puree the raspberries. Use the raspberry/cranberry juice while blending.Some raspberries have a lot of little seeds. So try out a spoonful of the above mixture and if needed, strain it with tea-strainer or something similar. I have tried it both ways and whenever there are a lot of seeds, straining it is a good idea.
- Pour it in a serving bow. Fold in the sour cream and heavy cream.
- Add sugar, lemon juice. Mix well. Refrigerate.
- Serve chilled. Garnish with few drops of heavy cream, very finely chopped mint leaves.

Fresh or Frozen Raspberries?
You can make this soup either using fresh or frozen raspberries. A quick tip: frozen raspberries are easily available in the freezer section of grocery stores. The taste of these raspberries is pretty consistent. With fresh ones, you may have to adjust the sugar depending upon the sourness of the raspberries.
Can I make this soup with any other fruits/berries?
Yes, you can absolutely make this using other berries. Check out the Strawberry soup recipe on my blog. You can also make the soup using blueberries. The sugar quantity may have to be adjusted depending upon the sweetness/sourness of the fruit, but the rest of the recipe remains the same.
How do I make this soup healthier?
In order to make it healthier, you can replace the sour cream/heavy cream with greek yogurt. The sugar may have to be adjusted. The taste may change slightly compared to the original version.

Raspberries are high in fiber, vitamins, minerals and are antioxidants. These are low in calories and have anti-aging capabilities. Raspberries are capable of protecting against diseases such as diabetes, cancer, arthritis etc.
