This crunchy, crispy, flavorful, healthy salad can be ready in a couple of minutes, and will be cone quickly too!
Recipe:
Italian Parsley – ½ bunch, chopped
Curly Parsley – ½ bunch, chopped
Mint – 3-4 sprigs, chopped
Cherry tomatoes – about 8 to 10
Walnuts – ½ cup
Olive oil
Lemon juice
Salt – to taste
Black pepper – ¼ teaspoon
Parmesan Cheese (optional) – 1 tablespoon, freshly grated
- Whisk olive oil, lemon juice, salt and freshly ground black pepper. Keep it aside.
- Dry roast the walnuts.
- Mix all the greens, cherry tomatoes (can be cut into halves, if you prefer)
- Add the walnuts, sprinkle parmesan cheese on top.
- Serve with the prepared dressing on the side.
