This one is like a salad on it’s summer stroll. Made this mid-summer, the same day when I made this – https://eatmoreart.org/2013/08/05/watermelon-waltz/. Half the watermelon was used to make the juice and the other half to make the salad. Some healthy stuff, that!
Recipe:
Watermelon – ½ (or 1 or any number you want :))
Salad greens – 3 handfuls
Feta cheese – 2 spoonfuls
Pistachio – a handful, chopped
For dressing (optional):
Olive oil – 3 tablespoons
Balsamic vinegar – 1 tablespoon
Salt & Freshly ground black pepper – to taste
Cut the watermelon into half. Scrape the fruit from the hard shell. Cut the fruit in cubes. Save the outer shell for serving the salad.
Mix salad greens (like arugula, baby spinach, lettuce or any such greens) with the cubed watermelon.
Mix all the dressing ingredients, if using this dressing.
Add the Salad greens and cubed watermelon in the outer shell of the watermelon. Top it with pistachios and feta cheese. Serve the dressing on the side.
