Update: I had made this during US Elections, but am appealing all Indians to go vote for the 2019 elections in India. Vote, India! Coming back to chakri, I have made this using rice flour and sour cream. This can be made in many different varieties using rice flour, wheat flour etc. Also, instead of sour cream, curd etc. can also be used. I have learned this recipe from my Mom. She has tried many different variations and the verdict is, the one with the rice flour with sour cream tastes the best. Chakri is generally made as a snack anytime, year round. But it is specially made during Diwali time. It’s extremely easy to make, takes about half an hour – most of that time is the time it takes for it to fry.
This batch makes around 25-30 chakris

Ingredients
- 2 cups Rice flour
- 11-12 oz. Sour cream
- Salt, to taste
- ½ teaspoon Turmeric powder (optional)
- 1 teaspoon Ajwain/Carom seeds
- ½ inch Ginger, crushed
- 1 Green chili, crushed
- ½ tablespoon Sesame seeds
- 1 teaspoon Cumin seeds
- Oil for deep frying
Special appliance needed - A sev maker with star attachment.
Instructions
- Take rice flour, add salt, ajwain, cumin seeds, sesame seeds, turmeric powder (optional), crushed ginger and green chili. Mix well.
- Gradually add the sour cream. This recipe does not require any water. Add as much sour cream as necessary to form a tight dough. Mix really well before you think you may need more sour cream. I used about 70% of the 16 oz. pack.
- Take the sev maker appliance, brush a few drops of oil on the inside of the appliance. Use the star attachment for chakri. Form a cylindrical shape of the dough and put it in the appliance to the top. Close it.
- In the meanwhile, heat oil for frying.While the oil is getting heated, form chakris/murruku by rotating and revolving rotate the revolve the machine on a wax papaer / parchment paper, or any plate and keep it ready.
- When the oil is hot, gradually add the chakris, keeping the heat on medium. Fry on both sides till golden brown.Enjoy.
