I am a true foodie, and a very picky eater. I generally eat what I like, and not necessarily always super healthy. Since I eat in moderation, it is generally not harmful even if I mix some not so healthy food with regular food.
But I have noticed the change in energy levels when I switch to clean eating or at least have 1-2 meals a day which are more on the healthier side, with more of veggies and fruits (which otherwise are rarely part of my diet in spite of being a vegetarian – go figure).
So this July, I started to consciously adding more healthier ingredients to my diet. Not only I feel great and have good energy, but my doctor also commented that all the recent regular lab tests done look much better than the ones done in the past. Not only that, I had fun creating some of healthy and colorful combinations. I actually look forward to that time of the day when I am making and consuming these healthy meals – and this rarely happend in the past 🙂
Lot of these recipes that I tried and will post one after the other, are vegan recipes. I am not vegan, I do eat dairy. But I tried out a lot of vegan recipes.
Here I have this Ombre-ish looking (I tried :p) Organic strawberry Oat Almond smoothie (vegan) made with almond milk, loaded with 3 superfoods. Tastes surprisingly good!
Recipe:
Oats – 1-2 tablespoons
Strawberries – 6
Almonds – 10-12
Almond milk – 1 ½ cup [can use any milk]
Honey/Maple syrup/Brown sugar [optional] – 1-2 teaspoons or per taste
Golden flax seed powder – ½ teaspoon
Hempseed powder – ½ teaspoon
- Soak oats in almond milk for at least ½ an hour. Can be done overnight as well.
- Blend strawberries, sweetener, flax seed powder and hempseeds powder in the above soaked oats milk.
- Add almonds (keeping 1-2 aside for garnish), blend it one more time. I like little bits of almonds when consuming the smoothie, hence I add that a bit later.
- Garnish it with fresh or dried strawberries and slivered almonds.
