This incredibly easy, quick, and amazingly delicious Chilled Blueberry Soup - a dessert soup - requires no cooking. You can easily make this soup with blueberries, raspberries, or strawberries. Adding a tiny bit of mint makes this fruit soup oh so refreshing.
2tablespoonsMint, finely choppedkeep some leaves aside for garnishing
Using a blender, puree the blueberries. Use the blueberry juice while blending.
Pour it in a big bowl. Fold in the sour cream and heavy cream.
Add sugar, lemon juice, chopped mint leaves Mix well. Refrigerate.
Serve chilled. Garnish with few drops of heavy cream, mint leaves.Enjoy!
Blueberry juice:You can either use readymade blueberry juice or make it at home. To make it at home, heat a pan and add 1 cup of blue berries and 1 cup of water each. Add 1 tablespoon of sugar, 1 teaspoon of lemon juice. Bring it to a boil and then lower the heat and simmer for 10 minutes. Turn off the heat, let it cool down, blend it in a blender. Strain and use it for making the soup.
